The olives — from a careful blend of local varieties: Frantoio, Moraiolo, Leccino, Pendolino — are hand-picked in November at the moment that respects natural cycles.

Each fruit is carefully selected and taken straight to the mill, where quick pressing keeps aromas and organoleptic qualities intact.
